He takes his culinary explorations a step further at his second eatery – a joint venture with Merivale that’s located within Hotel CBD. The menu may include: Lamb’s ‘Hearts & Minds’ - Deep fried lambs brains & tartare sauce. Served with a salad of green beans, bitter salad leaves, almonds and grilled lambs hearts or Pan-fried local fish, Wild Kingfish or Blue Eye - Served with pan-fried crushed kipfler potato, prawns, prawn oil and left-over greens.
